Great Price on a great boat, and I really know boats BTW.
Let me know if this hasn't sold in a couple months, and I'll take it off your hands. This would make a great B Day present for my Dad, who lives on a big lake in Maine. Also an epic drive/tow...

I bet That thing really moves out with the 351.

My guess would be 70-75 MPH.

Tops out around 45~50 its a flat bottom so it doesn't get on top of the water like a V and geared (propped) for towing skiers. I found a few pictures out on the web of ski pyramids, These boats will literally pull up as many people as you can stuff behind them. The second picture is a Mastercraft, but it's the same idea.

I tested one of these for Littoral Warfare (swamps/ rivers) and they were a bit faster than you give it credit for. Of course we were running Corvette V8's with straight exhausts.

I'm sure with a different prop it would scoot on top end. However, top end is not what you want when you are pulling your average adult or ten average adults out of the water.

not really.
They usually run a 1:1 gear. This severely limits top speed vs RPM. Most can only take a 14" prop. If you start getting into deep pitch and heavy cup situations. It'll miserable at low end or backing

Either way it's not exactly a speedboat. It's propped just perfect for doing what it does. Believe me speed is not your friend on Lake Lanier in a flat bottom.
If speed is what you want get an old Donzi, Cigarette, or even a Python. If water sports is your thing buy this boat.
